Blueberry Oatmeal Cottage Cheese Pancakes

Ok so these are in no way Italian, but sometimes you need pancakes and you just don’t care.  This morning was one of those mornings.  I have fallen into an breakfast rut, where all I ever have for breakfast is oatmeal with bananas, blueberries, and peanut butter (which is actually the best oatmeal ever, so I’m not complaining), but I wanted to experiment with other ways to consume oatmeal, bananas, and blueberries.


I also wanted it to be healthy because if I eat a really rich, sweet breakfast I feel terrible the whole day.  I turned to the internet, which is full of people bastardizing recipes to make them “healthy”. Unfortunately, when people try to make things healthy, they usually require an arsenal of specialty ingredients that I don’t have like coconut oil, spelt flour, and chia seeds.


This is not one of those recipes.  The most exotic thing you need is cottage cheese, and even then you could replace it with ricotta if you are feeling adventurous.  I like these because they have a hearty texture from the ground-up oats and cottage cheese and a slight sweetness from the banana.  Did I mention that the whole recipe is just 290 calories and it makes like 4 pancakes?




Blueberry Oatmeal Cottage Cheese Pancakes

1/2 cup old-fashioned rolled oats
1/2 medium banana
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 egg
1/4 cup cottage cheese
1-2 tablespoons milk
Put all the ingredients in a food processor and process until uniform.  Lightly oil a non-stick skillet, and heat.  Drop batter onto skillet by 1/4 cup portions.  Top with blueberries and cook until bubbles appear on top.  Then flip and cook until golden brown. Once they are done, top with whatever you want.  I did raspberry jam, bananas, and blueberries, but I bet nut-butter or syrup would be great as well!
